CheckBook Pro actually adheres to what you have set as the Highlight color for selected text under your Mac's System Preferences. So, if you change the setting there, the application's Highlight color as well as the Highlight color everywhere else on your Mac will be changed. No matter what though, highlighted text will always be white. But, you might try a darker Highlight color for more contrast—blue is actually pretty good and contrasty.
Anyway, to change the Highlight color for text, first, choose 'System Preferences...' from the Apple menu at the top of the screen. Then, click on the General button. Now, you'll see a menu button labeled 'Highlight color:' towards the top of the window. Just click that button and choose a new color and you'll be good to go!
