I would like to undo my most recent reconciliation. I clicked on undo reconciliation, and it looks as if everything will be unreconciled. Is it possible to only redo the most recent statement?

I didn't think you could undo a reconciliation (so you made me look it up and I now know better). If you use Time Machine, you can go back to a previous date though (but you first have to know where the .plist file is).

Yes, it's certainly possible to Unreconcile, but only for an entire Account rather than just the previous period's worth of Entries. Really though, even Unreconciling everything shouldn't actually set you back too much—it just unlocks the locked-in check-marks taking everything back down to simply Resolved status where the checks are still removable. So, basically, Unreconciling, making some adjustment to balance things out, and hitting the Reconcile button once should get you back where you need to be. With the adjustment having been made, you may put yourself back at a point wherein the Statement Balance immediately matches the Resolved Balance, thus making the re-reconciling fairly easy.
