How do I do this? I did some experimenting with the new color chooser and hate what I did and now want to go back to the way it was originally. How do I do that?

There's the option of deleting your Preferences file for the application to get the default colors back but that will reset your other preferences to the defaults as well, so maybe it's better if you input the RGB values for the colors. The Grid lines color is 222 across the board (so R=222, G=222, B=222, the primary row color is 255 across the board, and secondary row color is 242 across the board. The way you input these values is you click the color box, hit the Sliders option in the Color Picker window, select 'RGB Sliders', and then type into the boxes to the right of each slider.

Perhaps there will be a "reset colors" button in future builds?

Good thinking! Adding the reset option is definitely something we're exploring.
